Being on a Keto diet. I seen in other articles about Resistant Starches such as Starch Resistant Potatoes that the Resistant part only works, when the Potato is cold. But once you cook the potatoe The Resistant starches does not act to keep blood sugars down any more. Perhaps the resistant only works in it original from and heating it destroys that. I like the idea of using Tiger nuts, because I have trouble with Nuts themselves and wonder if Tiger nuts would be more gentle in my intestine, but are hesitant to use in baking or other things that require heating, because they become more carbohydrate active and would disturb Blood sugar issues.
